An Attempt at Meal Planning

OK. Tonight after work I have to go to the grocery store. I know what I want to make tonight, but I need to plan for the entire week. I also need to keep in mind that Hubby is not a vegetarian and I want him to be fed, too. I'm going to plan my meals and his and see what we can both have. Hopefully, I will save some money in here somewhere.

Here is what I'm planning for myself using things I already have so that I just have to pick some things up tonight:

My Vegetarian Weekly Meal Plan for March 10-16 (I'm only listing the main entres. Most will be accompanied with vegetables):

Monday: Spaghetti with meatless sauce. For this meal I plan to use all my usual ingredients, but instead of ground beef, I'm going to use veggie crumbles instead. I am curious to see if I'll be able to tell the difference. I'm going to try to pass it off to Hubby as well. If he can't tell the difference I won't have to worry aobut making two sauces. :)

Tuesday: I'm counting on having spaghetti leftovers. :)

Wednesday: Zucchini quiche. Fortunately, the recipe is on my other blog! Woo hoo! Very helpful in making my list!

Thursday: Tomatoes and Cheese Tortellini (a recipe someone posted on Blissfully Domestic Living). I'll try something new any day.

Friday: Rice and mixed veggies--keeping it simple.

Saturday: Stuffed peppers.

Sunday: Baked macaroni and cheese.

I'm going to buy a pound of grand beef and some chicken breasts in case Hubby really wants some meat. And I'm sure he will. His meals are easier to plan because I can be more creative with things I already know. ;)

And now, my grocery list:

Eggs
Green peppers
Zucchini
Rice
Frozen broccoli
Parmesan cheese
Bisquick
Yogurt
Bread
Tomato sauce
Olive oil (I think I'm almost out)
DiGiorno cheese tortellini
1 lb ground beef (for hubby)
1 pack skinless, boneless chicken breasts (for hubby)

That should do it for my food list. Some are items I always keep on hand. If the bill is too high, I will simply make adjustments. It's a start and I'm new at this whole meal planning thing. Oh, and I should add, that this is just dinners. Breakfast and lunch are normally not more than oatmeal and sandwiches.

What do you stuff your peppers with?

I"m going to use the veggie crumbles; but we'll see how they taste in spaghetti sauce first. ;)
